Selection sesame and storage

Sesame selection

Sesame seeds have a nutty, slightly sweet flavor and aroma which is enhanced by roasting. They are available in packaged spices in large quantities in Section Middle East market. Due to its high oil content seeds are quickly becoming obsolete. To buy in small quantities and fast is best.

To improve the taste of nutlike seeds, sesame seeds on a baking sheet and toast for 15-20 minutes at 350 degrees F. distributed oven, stirring frequently.

Sesame seed storage

Uncooled seeds should be stored up to one year frozen in an airtight container in a cool, dry place for up to three months in the refrigerator or up to six months.

Sesame oil, on the other hand, is remarkably stable and will keep for years without rancid, even in hot climates.
