Lemon Cheesecake And Easy Bar Cookies

These rods have a cheese-flavored lemon cookies and try white chocolate. Quick and easy, because the cake mix to do. Tried and true recipe brings raves. Ingredients:

  • 1 box lemon cake mix
  • , Lightly beaten 1 egg
  • 8 tablespoons softened butter (1 stick)
  • 1 (8 oz) of cream cheese, at room temperature
  • 1 cup white chocolate chips
  • 2 eggs
  • 2 cups granulated sugar
  • Half cup biscuit crumbs

Preparation:

Preheat oven to 350 F. Grease a baking sheet with parchment paper 9 x 13 inches.

Combine cake mix, butter and 1egg with a large spatula or a wooden spoon. This will give your arms a workout, but if you always make folding and pressing the mixture, eventually unite to form a paste that looks like play dough for children.

With your fingers, press dough evenly into prepared pan bottom. Sprinkle with grated white chocolate and gently press into the dough a bit, so it does not roll.

In a medium bowl, beat cream cheese and 2 eggs for 30 seconds. Stir until smooth in sugar, then beat at medium speed for 3 minutes until smooth.

Pour the cream cheese mixture evenly over the bottom layer. Sprinkle with cookie crumbs.

Bake for 30-35 minutes until center is firm. Remove from oven and let cool on a rack cut at room temperature. Cookie bars into squares to serve.

Yield: 24-36 bar cookies, depending on size of cut
