Ingredients:
- 1 pound plums, halved and pitted
- 1 pound apricots, halved and pitted
- 1 cup of apple cider vinegar
- 4.3 cup water
- 1.4 cup balsamic vinegar

- 1 cup of apple cider vinegar
- 1 cup firmly packed brown sugar
- 1 cup granulated white sugar
- Half a cup of fresh lemon juice
- .
- A quarter cup of ginger, peeled and chopped
- 1 small onion, thinly sliced
- 1 Serrano chile, or to taste, seeded and chopped
- 2 garlic cloves, finely chopped
- 4 teaspoon kosher salt
- 1 tablespoon roasted mustard seed
- Palo cinnamon 1
Preparation:
Place 1 cup apple cider vinegar, brown sugar, white sugar and lemon juice in a separate pan. Bring to a boil, reduce heat slightly and let it bubble for 10 minutes. Let cool for 5 minutes.
Add the brown sugar mixture over the fruit with ginger, onion, pepper, garlic, salt, mustard seeds and cinnamon stick. Simmer for 45 minutes. Discard the cinnamon stick.
Pour stir the mixture in a food processor or mixer until smooth and hard. You need to do more than once. Give back to the pan and simmer until thickened.
Place the duck sauce in a sterilized glass. Cover loosely and let cool to room temperature. Pull the cover and in a cool, dark place for at least 2 weeks before use.
Serve as a condiment with duck, chicken, pork and ribs.
