Ingredients:
- 4 fillets of beef tenderloin (filet mignon), 1.1 / 2 inch thick (6 ounces each)
- 1 teaspoon Worcestershire sauce
- Half a teaspoon of kosher salt
- A quarter teaspoon coarsely ground black pepper
- 1 tablespoon butter
- Fourth cup finely chopped green onions
- 2 garlic cloves, finely chopped
- Third cup of red wine
- 1.2 cup beef broth
- Half cup heavy or whipping cream
- 2 teaspoons Dijon mustard
- Chives for garnish
Preparation:
Heat a large skillet over high heat until very hot but not smoking. Add 1 tablespoon butter and stir to coat the pan. Brown steak, then turn 3-5 minutes on one side and cook for 3-5 minutes on the other side of medium rare cooking. (Turn only once.) Keep warm while preparing the sauce Sirloin Steaks and removal.
In the same pan with no outlet, onion and garlic, stirring for 30 seconds. Carefully pour in the wine and stir, scraping the juices from the bottom, about 2 minutes. Add broth and bring to a slow boil. Cook 3 minutes, then add the cream and cook until the sauce thickens, 3-5 minutes. Whisk in Dijon mustard until smooth. Fillets in the pan, turning to coat both sides with hot sauce and 1 minute.
Serve sauce over filet mignon steaks hot pan and sprinkle with chopped chives.
Yield: 4 servings
