Quick Spicy Chicken Soup Recipe

Make a rich chicken broth in less than an hour with the legs and chicken thighs or back. The recipe uses few ingredients and is very easy to do. It is about 2 liters of broth can be frozen.

Preparation time: 15 minutes

Cooking time: 1 hour

Total time: 1 hour 15 minutes

Yield: 4.2

Ingredients:

  • 1 tablespoon vegetable oil
  • Cut 1 medium onion, medium dice in
  • 3 pounds chicken legs and thighs, trimmed of excess fat and cut into 2-inch pieces (or again - see Appendix)
  • 1 teaspoon of salt
  • 2 bay leaves

Preparation:

Heat the oil in a large pot, heavy-bottomed medium heat. When waves of oil, add the onions and chicken pieces and cook until the pink color, 5-7 minutes.

Reduce heat. Cover and cook until chicken is its juices, about 20 minutes. Increase heat to high; 2 liters of water (previously boiled when pressed), bay leaves and salt. Once the water starts to boil, immediately reduce heat to low again. Cover and simmer until the broth is rich and flavorful, 20 to 30 minutes.

Strain and discard solids. Broth is ready. O, then allowed to cool to room temperature and refrigerated or frozen.

Yield: only two quarters

Cooking Note:
You can four bones of the back and / or books chicken, replace cut into 2-inch pieces for the legs and thighs. You can also buy chicken broth 4 pounds instead of legs and thighs asked here. Simply remove the breast first and reserve for another purpose. To reduce, wings, legs and thighs and continue with recipe.
