Preparation
If you use a farce, prepare in advance. It needs to cool before filling the bird.
Preheat oven to 375 degrees F. Grease a baking sheet with foil makes for easy cleaning.
Master Massage the sauce into the skin of the Cornish hens. (Improves color, but adds no calories or taste.) Cut off wing tips and put them back.
Melt the jam, butter and Worcestershire sauce in a bowl in the microwave for a minute. Mix well. You do not want to cook. (You can shoot, but not too long, only until they melted to combine.)
If you use a farce, fill Cornish hens and in a baking dish. Otherwise, place an orange wedge in each cavity. Place filling into prepared pan, the flat side of the chest. Brush half of the glaze over the skins of Cornish hens.
Bake uncovered for 45 minutes. Remove from the oven and brush with remaining glaze. Bake an additional 15 minutes. Try to read an instant thermometer in the center of the filling or between the thigh bone and breast play. It should read 180 degrees F. Let stand 10 minutes before serving.
Yield: 4-8 servings
