Ingredients:
- 1 can (12 oz) 7-Up ® soda or lemon-lime soda (divided use)
- 1 cup mixed dried fruit (blueberries, strawberries, blueberries, cherries - see note)
- 1-1/2 cups (3 sticks) butter, at room temperature
- 2 cups of sugar
- 4 eggs
- 3 cups flour
- 1/2 teaspoon salt

- 1 cup sugar confectionery
- Lemon juice 1 teaspoon
- 1 teaspoon lemon zest
- 1-2 tablespoons milk or cream
Preparation:
Cut large pieces of dried fruit, if all parts are of uniform size. Trade shows make 3/4 cup lemon-lime soda and set aside. Pour remaining soda in nuts and let stand for 30 minutes to inflate. Let the fruit and pat dry with kitchen paper.
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time beating after each addition well.
Measure the flour into a separate bowl. Add the nuts and mix well. (So hang fruit cake instead sink to the bottom.) Sift nuts and set aside, then enter the salt to the flour.
Stir flour, lemon extract, lemon zest, grated lime and the reserved 3/4 cup 7-Up ® to the creamy butter and sugar. Mix well. Stir in floured nuts.
Pour filling into prepared pan. Bake made with a toothpick for 1 hour or until center tests. Cool to room temperature.
To make the glaze:
Combine sugar, lemon juice, lemon zest, and just enough cream or milk to make a glaze that can be irrigated. Pour. In a small plastic bag Cut a corner of the bag and use it as a pastry bag to drizzle the glaze on the cake. (Another option: instead of Sift the icing on the cake icing.)
Note: Most markets carry packets of nuts. To a type of dried fruit, such as dried cherries. Use, you can replace the lemon juice and lemon zest, but works best with soda lime and also gives you more color in the finished cake.
