Ingredients:
- 4 fillets of beef tenderloin (filet mignon), 1-1/2 inches thick (6 oz each)
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon kosher salt
- Coarse ground black pepper 1/4 teaspoon
- 1 tablespoon butter
- 1/4 cup finely chopped shallots
- 2 large cloves garlic, finely chopped
- 1/3 cup red wine
- 1/2 cup beef broth
- 1/2 cup heavy or whipping cream
- 2 tsp Dijon mustard
- Chives for garnish
Preparation:
Heat a large skillet over high heat until very hot but not smoking. Add 1 tablespoon butter and stir to coat the pan. Brown steak 3-5 minutes on one side, then turn and cook 3-5 minutes on the other side of medium rare cooking. (Write Once.) Remove., The Sirloin Steaks and keep warm while preparing the sauce
In the same pan without a drain, the shallots and garlic, stirring for 30 seconds. Add the wine to pour and stir gently, scraping the juices from the bottom, about 2 minutes. Broth and bring to boil slowly becoming one. Cook 3 minutes, then add the cream and cook until sauce thickens, 3-5 minutes. Whisk in Dijon mustard until smooth. Steaks to coat back into the pan, turning both sides with sauce, hot and 1 minute.
Serve hot pan on sirloin steaks and sprinkle with chives.
Yield: 4 servings
